Granny McCoy's Chicken Stew
Boil 3# chicken breasts, or chicken tenderloins
Once done, shred chicken
Add 2 15 oz cans petite diced tomatoes
A 12 oz bag of frozen peas and carrots
A 12 oz bag of frozen corn
6-8 medium size potatoes diced
Sometimes she would add a 15 oz can of green beans
All in crock pot.
High setting for a couple of hours, then turn on low until veggies are done.
This has worked good for me to cook & shred the chicken one day, then the next morning put it all in the crock pot.
Smells so good … tastes even better.
I serve with a pan of hot cornbread.
